Średniowieczna Francja, czasy jednej z wojen rozgrywających się w tym kraju. Miasto Mayon jest oblężone, zapasy się kurczą. Książę de Richelieu, wielki smakosz, jest tym niepocieszony: produkty, które są dostępne w spiżarniach, zdecydowanie nie odpowiadają jego gustowi. Jednak dzięki pomysłowości nadwornego kucharza powstaje z nich coś, co wkrótce stanie się bardzo znane i pozostanie takie do naszych czasów. Co to takiego?

Kucharz wymieszał ze sobą żółtka jajek*, oliwę i sok cytrynowy, po czym dodał te przyprawy, które jeszcze były dostępne. Powstałym sosem polał ugotowane jajka. Książę de Richelieu był zachwycony pomysłem: nowy dodatek bardzo mu posmakował. Gdy wojna się skończyła, sos ten – zwany majonezem, od nazwy miasta, w którym powstał – szybko zagościł na europejskich stołach i stał się popularny.

Medieval France, the times of one of the wars taking place in this country. The city of Mayon is under siege, the stocks are shrinking. Duc de Richelieu, the great gourmet, is disconsolate about it: the products that are available in pantries definitely do not suit his taste. However, thanks to the ingenuity of the court cook, they are made into something that will soon become very well-known and will remain so until our times. What is that?

Answer

The cook mingled together egg yolks*, olive oil and lemon juice, then added the spices that were still available. He poured the resulting sauce on the boiled eggs. Duc de Richelieu was delighted with the idea: he really liked the new addition. When the war ended, the sauce – called mayonnaise, after the name of the city where it was created – quickly appeared on the European tables and became popular.

*The whites were used as one of the ingredients of mortar in building and repairing walls around the city.
